6 large Eggs
2 cups Cottage Cheese (Full-fat preferred)
2 cups Fresh Spinach (sautéed and squeezed dry)
1/2 cup Shredded Sharp Cheddar
1/4 cup Green Onions (chopped)
1/2 tsp Garlic Powder
1/4 tsp Nutmeg
Salt & Pepper to taste
1. Pre-heat oven to 175°C (350°F).
2. In a blender, combine eggs and cottage cheese until smooth.
3. In a bowl, stir the egg mixture with the spinach, cheese, and seasonings.
4. Pour into a greased 9-inch pie dish.
5. Bake for 35-40 minutes or until the edges are golden and the center is just set.
