2 cups Cottage Cheese (Full-fat)
4 large Eggs
1.5 cups Almond Flour
1/2 cup Shredded Mozzarella
1 tsp Baking Powder
1/2 cup Fresh Spinach (chopped)
1 tsp Garlic Powder
Salt & Pepper to taste
1. Pre-heat oven to 190°C.
2. Blend cottage cheese and eggs until smooth.
3. In a bowl, mix almond flour, baking powder, and spices.
4. Fold the wet mixture into the dry, then stir in spinach and cheese.
5. Spoon into silicone muffin liners.
6. Bake for 25-30 minutes until the tops are golden and firm.
