2 Medium Sweet Potatoes
300g Lean Ground Beef
1 tbsp Raw Honey
1 tsp Red Chili Flakes
1 tsp Fresh Ginger (grated)
2 cloves Garlic (minced)
1 tbsp Apple Cider Vinegar
Green Onions for garnish
Roast sweet potatoes at 200°C for 40-45 minutes until soft.
While potatoes roast, brown the beef in a skillet. Drain excess fat.
Stir in garlic and ginger; cook for 2 minutes.
Mix honey, chili flakes, and vinegar; pour over the beef and stir to glaze.
Slice potatoes open, fluff the inside, and pile the beef mixture on top.
Serve with a side of steamed broccoli or a fresh green salad for an even more healthy meal.
